Quick and easy dishes for your quarantine life

Tuesday, March 31, 2020 Cayman Islands

Curfews and lockdowns are just about everywhere  and being laid off leaves me nothing much to do at home except cook cook cook! My mom used to tell me that sautè-ing is the beginner's introduction to almost all Filipino dishes. So by watching numerous tutorials on YouTube (highly recommend PanlasangPinoy!) and reading cookbooks, I'm going to share with you my very easy "walk in the park" recipes for three dishes below that basically start off with Sautè!

// Before we begin, check out this new project on my blog called International Blogger Friends Directory. The goal is to have at least one blogger friend from each country around the world! Click here for more info. //

I am still in the process of discovering new stuff and I definitely enjoyed this one.  I am a newbie in this field so I most rely on tutorials. Fortunatley enough, the dishes that I tried turned out to taste good so feel free to try them out too! Leave a comment and let me know how it turned out for you^^

What else is there to do?

Thursday, March 26, 2020 Cayman Islands

The global health crisis has brought almost all nations into community quarantine, and here in Cayman, we are not an exemption. The government has recently mandated a lot of businesses to temporarily close due to the recent developments with the pandemic. As we speak, we have 9 active cases here on island, and the best measures the authority came up with are:

  • Twenty-four (24) hour curfew (we literally panicked buy yesterday because no one is allowed to go out!),
  • Island-wide lock down (airport is closed for passenger planes, only cargo is allowed), and
  • To temporarily shut down non-essential business, causing a lot of employees to be laid off.

And you guessed it right, I was laid off for two weeks with nothing much to do at home. All I did the past few days are read blogs, watch Netflix, cut my hair out of boredom, some yoga, and studied a bit for my driving test. This is also the reason why I did a bit of makeover in my blog and also decided to put up two new pages, the Shop and Contact sections! I've been sort of "blogging" on and off for a few years now and I wanted to sell some of the resources I've outgrown. I hope it will be useful to new bloggers out there. I also wanted to expand my circle so I signed up for Bloglovin and Bloglist.

My week in summary

I know there is a lot of suffering in the world right now, and the anxiety has been making us stressed, but here I am trying to put a little bit of positivity out there. The idleness has made me reflect on my life and made me grateful for a lot of things especially my health. I am grateful for waking up this morning, for being given another chance to live; and I pray for the world to heal, for the whole human race to overcome this challenge, and for us to reflect and not let greed, money, capitalism, and other supercial things control our lives anymore.

Lazy Sunday

Tuesday, March 10, 2020 West Bay, Cayman Islands

Today is just a normal rest day for me. I started the day off with a glass of water and a 60 minute yoga workout. Ever since I discovered yoga I have been so interested in it that I want to do it almost everyday. I just stayed at home the whole day, cooked ramen, took a nap for a little bit, and continued watching Crash Landing On You.

I live in the suburb part of the island so my view every morning is so peaceful and serene. I must say countryside is perfect for soul searching and meditation.

If you haven't tried yoga before I highly suggest you do. Especially if you are under a lot of stress and have trouble managing your mental wellbeing. It will not only relax your body, but will also help you connect your mind, body, and soul in one.

You can try it out at home by downloading the Yoga Studio app (This is what I use, not sponsored btw!) or watch tutorials at GaiamYoga website. All you need is a mat to start off.

After being well rested, I spoiled myself with a dose of Crash Landing On You til evening!

As influenced by Kdrama, say hello to my homemade ramyunㅋㅋㅋ

Have a good day everyone!

With Love,
A. Choi

Catching up

Tuesday, March 3, 2020 West Bay, Cayman Islands

Hey! Just in case you are wondering, I'm doing okay. Yesterday I went out on a lunch with my nephew at a Vivo Restaurant in West Bay, five minutes away from my workplace. It's my first time eating vegan and I must say it's not that bad. It's just costly lol.

I'm starting to focus on holistic recovery for myself. I recently enrolled in Yoga classes (Yin and Vinyasa) and I'm trying to condition my mind to always have a positive outlook in life.

I cut-off almost all my social media presence (except twitter and blogspot) and it is doing me good mentally so far. I have also engrossed myself over Crash Landing On You, you guys should watch it too! It's a K-drama with a lot of life lessons and revelations about North Korea.

Anyway that's it for now -- It's 5:30pm, I'm about to go home and binge watch you know what!

Let me end this post with a smiling face~
